2014 UMBA Convention Floor

In addition to the Wind, Rain and Snow, here are some of the highlights of this year’s convention as many traveled the harsh winter conditions in Minnesota, Iowa and the Dakota’s to join their colleagues and friends at the Treasure Island Resort and Casino in Red Wing, MN.

Attendees remarked how important it is to gather as bakers, cake decorators, bakery owners, students, and vendors to share ideas and their successes with their industry friends.

The convention had many facets to engage participants in their learning. The Educational Sessions encompassed topics that covered cake decorating, baking topics and business matters. The baking track covered: Gluten Free Baking, Trans Fats, Artisan Breads and Frozen Dough. The business track addressed: How to Run a Bakery from an iPad, Marketing Ideas, Affordable Care Act and Social Media. There were two Hands-on sessions with a national presenter Peggy Tucker – Certified Master Sugar Artist – School of Cakeology. Participants created their own items with the guidance of an expert. floor that  focused on Wedding Cake Structure, Truffles and Ganaches, Whipped Icing and Animal Print Flowers. What a great place to learn new techniques and ideas.

Contests were a big part of the UMBA convention. The Deco Cake contests are for beginners as well as advanced decorators.  Categories this year included Fondant Wedding Cakes, Novelty/Specialty, Cupcakes and Sugar Showpiece. There were 76 entries in this contest. The UMBA Cake Challenge was new this year. Four participants decorated on site over a 6 hour period a wedding cake, fondant cake and sculpted cake. The Baked Foods Contest had four categories: Bread Showpiece/Display, Foccacia Bread, Best Cinnamon Roll, Baguette. Prizes and trophies were awarded at the banquet and the award ceremony on Sunday morning. Picture of winners are in this newsletter.

There were 51 booths this year including  major distributors and companies representing flour, technology, equipment, packaging, yeast companies, cake decorating supplies; technology materials, coffee and baking materials. There was something for everyone in the baking industry.

Cook Specialty Company was a new exhibitor this year

The banquet and award ceremony seated 250 people. One of the highlights of the banquet is awarding the new inductees into the Upper Midwest Bakery Hall of Fame. Burt Robinson was unable to attend due to health reasons. His daughter Lori Matson received the award in his name. Linda John who coordinates the Deco Cake Contest was the other recipient. She was accompanied with her family.

The Saturday evening banquet, the Sunday morning brunch and Saturday evening bowling provided time for enjoyment and camaraderie on this weekend trip.
